4 Tbsp (1/2 stick) softened butter
2/3 cup light brown sugar, packed
1/2 tsp vanilla
3/4 tsp flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 1/2 cup rolled oats
3/4 cup raisins
1/2 cup chopped walnuts (optional)
Cream butter, sugar, egg, and vanilla until smooth.
In a separate bowl, whisk flour, baking soda, cinnamon, and salt.
Combine the butter-sugar-egg mixture and the flour mixture.
Stir in the oats, raisins, and walnuts.
Chill the dough until stiff.
Scoop the dough onto a cookie sheet with a spoon. Place cookies 2 inches apart on a parchment-lined baking sheet.
Bake 10-12 minutes in preheated oven at 350°F (175°C).
Cool the cookies for 5 minutes before you transfer them to a wire cooling rack.
