I have posted this previously, but this is such a great cookie for hot weather, so refreshing. Enjoy.
1 cup butter, softened
1/2 cup granulated sugar
2 cups flour
Preheat oven to 350°F.
In a medium bowl. blend together the butter, sugar, and the flour. Press into an ungreased 9″ x 13″ pan. Bake for 15 to 20 minutes until firm and golden. Set aside.
1 1/2 cups granulated sugar
1/4 cup flour
2 lemons, juiced
In medium bowl, whisk together the sugar and flour. Whisk in the eggs and the lemon juice. Pour over backed crust.
Bake for 20 minutes. The bars will firm up as they cool. When cool, dust with confectioner’s sugar. Cut into uniform squares. These are great serve after cooling in the refrigerator.
