Munchie Mondays

Date Nut Bread

1 cup boiling water
8 ounces of chopped, pitted dates
2 Tbsp butter
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
2 1/4 cups of flour (stir before measuring)
1 Tbsp baking powder
1/2 tsp salt
1/2 cup chopped walnuts or pecans
cream cheese

Preheat ove4n to 325°F.
Grease a 9″x5″x3″ loaf pan.

Pour boiling water over dates in a medium bowl.
Add butter. Set aside.

With mixer, beat sugars and egg until light.

In another bowl, combine the flour, baking powder, and salt. Add sugar mixture, alternating with the date and water mixture.
Stir in chopped nuts.

Pour into greased loaf pan.
Bake for 45-55 minutes or until wooden pick inserted in the center of the loaf comes out clean.
Serve with cream cheese.

    Sounds great! Do you think some spice would be good in this? Maybe nutmeg or cloves?
