Munchie Monday


Blueberry Muffins

1 1/2 cup flour
3/4 cup granulated sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 large egg
1/3 cup milk
1 cup fresh blueberries

Topping:
1/2 cup granulated sugar
1/3 cup flour
1/4 cup buter, cubed
1 1/2 ground cinnamon

Preheat oven to 400°F. Grease muffin tins or line with muffin paper.

Combine flour, sugar, salt, and baking powder. Place vegetable oil in a 1 cup measuring cup; add the egg and enough milk to make one cup. Mix with the flour mixture. Fold in the blueberries. Fill the muffin cups to the top.

Mix the crumb topping with a fork and sprinkle on top of the muffin cups.

Bake for 20-25 minutes or until done.
